I had cooked my pasta but it was still a little too chewy. Unfortunately I had already drained all of the pasta water. So, I put a couple of ounces of tawny port into the pot, added back the pasta, got the liquid bubbling and cooked a couple of minutes until most of the wine had evaporated or gotten absorbed Then I added the sauce.
It made a big difference for both the sauce and the pasta. I'd eat that from a good restaurant and smile as I paid the check.
