More for my own memory, here...

We had a boneless chicken breast, sliced, sitting in the fridge. It needed to be used and needed a soak in something acidic as it had been longer than a day in the fridge. Thus: lemon teriyaki chicken with spinach and onion.

Marinade:
1/2 cup lemon juice
1/2 cup Soy Vay Very Teriyaki (if you use a store-bought teriyaki, this one's very good)
1/4 cup cream sherry
1 Tbsp honey
1 tsp toasted sesame oil
1 tsp crushed ginger
1 tsp mustard (not powder!)
2 cloves minced garlic
Aleppo pepper and crushed black pepper to taste

I marinated the chicken for 30 minutes, and in the interim cooked
1 sliced medium onion

on low heat in EVOO and a touch of sesame oil. I removed the onion from the pan, should have dried the chicken but didn't, and started frying the chicken in my big skillet in two batches. When the chicken was done I put it in a large bowl. I strained the marinade into the frying pan and added a bit more honey and some sugar (about 1 Tbsp each) and let it reduce. I poured this on the chicken. Then most of a bag of Trader Joe's frozen leaf spinach went into the frying pan along with the onions, and...

it was done. And the flavor was good. I need to let the chicken dry a bit next time.

I served this with soba noodles, and it was yummy. The sauce goes very well with the noodles.
