I added an extra teaspoon of baking soda, in part because the eggs were large instead of extra large; kept the buttermilk; added a little extra vanilla; and doubled the ginger powder. I also used a different cocoa, one which it turns out is nowhere near as chocolate.
As the cocoa was nowhere near as dense or as chocolate, the recipe ended up tasting much like regular chocolate chip cookies. More tweaking is called for.
